Samarkand – one of the oldest cities in the world (2750 years) – Eden of the East, as its poets of antiquity and chroniclers called it – is located on the territory of the Zeravshan river basin (“gold bearing”). Samarkand experienced many wars of conquest, invasion and destruction, but again revived to life. During the reign of Amir Timur (Tamerlane – 1370-1405) the city becomes the capital of a huge empire: Azerbaijan, Georgia, Iran, Iraq, Afghanistan, part of India, the whole territory of present-day Central Asia, and also were in vassalage Egypt, Syria, Turkey , The Golden Horde, Mogulistan (the territory of present-day Kyrgyzstan). In Samarkand, masters and artisans from all parts of the country were brought. They were free people, not slaves, so the city still retains the names of the streets and quarters where the craftsmen who own one craft: “Silver rows”, “Quarter of potters”, “Vyshyvalshchits suzane”(“Embroiderers suzane”) street, “Quarter of Gunsmiths” . The nationality of the masters did not matter, they were united by the craft they owned. Apparently, therefore, more than 100 nationalities and nations live in modern Samarkand. And how many national dishes in our city! Samarkand is considered to be the most “tasty” city of Uzbekistan due to the variety of dishes of Uzbek national cuisine.
Gourmet tour of BUKHARA
During its centuries-old history (2500 years), Bukhara has repeatedly won, collapsed, lost its international significance as the center of spiritual culture in the East. But each time Bukhoro-i-Sharif (the “noble Bukhara”) was restored again, its economy, science and art were reborn, new buildings were built. In Bukhara and its environs there are more than 500 architectural monuments of different times and epochs. It is worth to wander through the narrow streets of the “old” city and you get the impression that the “time machine” has moved you to the medieval East. Since Bukhara is an oasis in the Kyzyl-Kum Desert, there have always been problems with drinking water, so the dishes of Bukhara’s national cuisine did not differ with a special variety. In our time, everything has changed, but the priority was the dishes prepared from the meat of the local breed of desert sheep. This is a “tandoor kabob”: large pieces of meat are placed on wooden skewers, fall into a special clay oven (tandoor) and are prepared on gradually cooling wood burning coals.
